Stuffed Chilli / Capsicum

This one’s my mom-in-law’s recipe for stuffed chilli

The Filling:
2 cups roasted besan
1/4 tsp tumeric powder
1/2 tsp red chilli powder
2 tsp coriander powder
A bunch of chopped coriander leaves
Sugar to taste (1 to 2 tsp)
Salt to taste
Lemon juice to taste (say, juice of 1/2 a lemon)
2-3 tbsp oil
(We never cook by measurements, always by 'andaaz' as per my mom in law!!.. you can tell the taste by the smell too of the food too!)

Cook the filling in oil, until the masalas get cooked. We generally taste and add anything else required..

Take a few fat green chillies / capsicum, slit and fill them with the filling mixture.

Then cook the stuffed chillies in some oil in a kadhai / pan. Cover and cook and keep stirring the chillies every 2 mins.

Enjoy as a yummy snack or main course!

Tip: You can use the same filling masala andcook chopped capsicum in it!

Garlic Bread

Very easy to make Tastes yummmmmmm!!
This one goes for Priya's Sunday Snacks Event


Ingredients
Bread(Wheat bread or normal bread)
Butter
Cream
Cheese
Garlic
Olive oil
Oregano paste

Procedure:


Take 6-7 garlic cloves and grind in a grinder till it becomes smooth paste.


Take some butter and keep it at room temperature so taht it becomes soft.Mix the garlic paste and cream with the butter.


Now cut the bread slices into half.Apply the butter garlic mixture on the bread .Coat the sides with olive oil.


Put some shredded cheese on this and roast in the oven till the cheese melts.Else you may put it on an open tawa and roast it till cheese melts!!


Add the oregano falkes/paste for flavour
Serve in a wooden /straw basket

Enjoy with Soup
You can also have it with pasta
Or if you are crazy like me;) have it for breakfast even with a nice cupppa coffeee !!

Mash Potato

Its a easy dish.It can accompany other dishes or one can just serve this on a dish with pasta and garlic bread.


Ingredients
Potatoes
milk
Cream
Butter,
Salt
Pepper
Cheese(optional)

Procedure:
Boil potatoes in a pressure cooker.Once they are boiled peel them.
Gently smash them and add warm milk,salt ,pepper and butter .Mix it and blend it till it becomes a complete single dough like thing

Now put this in a microwave and bake it till i becomes a little golden brown(caution :do not bake it too much)

Chef's Tip:You may optionally add Mozarella cheese before baking it in oven

Roman Style Spicy n Creamy Pumpkin Soup

When we think of pumpkin,the first thought comes to our mind is "Ewwwww..i don't like it"Since my childhood i always hated pumpkin and Mum was really tired telling how good it will be for my health

The fact about it is that its one of the best known vegetables to humankind.It is not only loaded with vitamin A and antioxidants, but it’s a good source of vitamins C, K, and E, and lots of minerals, including magnesium, potassium, and iron.Its colour is beautiful and it makes us think of autumn,harvesting and brightness.

Today being a Sunday morning ,Me and Mum thought about it and made this quick easy Pumpkin soup,which is healthy tasty and so tempting.Dad loved it and so did we both










Ingredients:

Red Pumpkin
Olive oil(Extra virgin is better)
Potatoes
Onions finely chopped
Garlic cloves
Fresh and finely cut Oregano,Parsley,Thyme,Rosemary,Basil
Black pepper powder
Milk
Cream
Salt
Chilly flakes/Red chilly powder


Procedure
In a large bowl put water and chopped potatoes n pumpkins(75% pumpkins 25% potatoes)and bring to boil.
Take a separate pan and add the extra virgin olive oil .Now add finely chopped onions and finely chopped garlic cloves.Saute it till golden brown.Add the herbs+ chili Flakes+ black pepper powder.Now add the boiled pumpkin + potatoes.Let it cook well with onions mixture.Once it is cooked well add some water and milk.
Put the whole thing in a blender and puree till smooth.

Now finally put the puree on the flame and add cream..Garnish with herbs and serve hot with Garlic bread!!
