The Real Chicken Shorba


Chicken Soup Pieces
1-2 onions - roughly chopped
1-2 tomatoes - roughly chopped
Some ginger - garlic pieces
Few cloves, peppers, bay leaf, cinnamon
Turmeric -  a pinch
Salt

Put all in a cooker with water for 3-5 whistles
Once cooled, strain the soup
Shred and add the chicken pieces (cooked while making the soup)
Garnish with lemon juice and coriander, and serve.. see how it vanishes!!

Carrot, Tomato and Beet root soup




Pressure cooked 2-3 tomatoes, 1 beetroot and 1 small carrot with 2-3 pepper corns
Blended when cooled, and boiled before serving

Souper Soup Time : Broccoli Soup


The word broccoli, from the Italian plural of broccolo, refers to "the flowering top of a cabbage"Broccoli also has health benefits like prevention of heart disease ,cancer and is also proven being rich in Vitamin C.

This is a very easy soup to make and tastes yummy

Ingredients:
Chopped onions
Chopped Potatoes
Broccoli chopped
Garlic cloves
Mixed herbs
Pepper
Milk
Water
Salt


Procedure
Mix all ingredients except Milk and Cornflour.Pressure cook till approx 2-3 whilstles.
Now blend everything in blender.Take a pan and put blended mixture in it .Add Milk and Cornflour.Season with herbs .Serve pipping hot

Souper Soup -French Onion Soup - A quick approach


Its winter in Mumbai.Time to bid au revoir to the fans and ACs.This is a famous french soup called "Soupe à l'oignon" and is famous all over the world. I tried this simple French onion soup in this weather and it turned out to be fantastic.

Ingredients
Olive oil
Onions thinly sliced
Ginger Garlic paste
Pepper
Cornflour
Vegetable/Chicken stock
Croutons
Cheese
Salt to taste
Very little Brown Sugar
Additional seasoning herbs like thyme,rosemary,basil,oregano


Procedure:
Fry Sliced onions in olive oil.Add Ginger Garlic paste,pepper,brown sugar and salt.Fry till dark brown but not till burnt.

Add vegetable stock once the onion become brown.Add cornflour and let it boil for around half an hour.Keep stirring in between to avoid lumps.Once the miture boils well add croutons and cheeses on the top.

Cook till cheese melts.Serve hot.Add herbs for additional seasoning

Carrot Coriander Soup

I'm back after very long.. My baby is a 14 month naughty toddler now.. and she loves to eat :) So that's sure to get me back to innovating and blogging!

She was a bit unwell yesterday, & I thought a soup would do her good.

No tomatoes, no spinach, for the standard soups that I can whip up easily, so took one carrot, a bunch of coriander leaves a fistful of yellow corn & 2-3 peppercorns & salt for seasoning.. Cooked in the pressure cooker and blended in the mixie. Made it a bit watery.

Needless to say, Sana baby loved it!

Burnt Onion n Baby corn Sweet Corn Soup


Simple Soup on a Rainy day

Ingredients:
Olive Oil
Sliced onion
Garlic flakes
Oregano
Basil leaves
Sliced Babycorn(boiled)
Boiled Sweet corn
Salt to taste
Cream



Procedure
Fry onions in olive oil.Add garlic and oregano.Let it burn a little.Add salt and some water.Now put it in blender till it becomes completely blended.Bring it to boil.Add boiled corns n baby corns.
Top with cream and basil leaf

Serve hot

Spinach Soup

Always wanted to try this out, so saw a few recipes, and taking clues from them all, came up with this...

I used:
1 1/2 bunches of roughly chopped palak leaves
1 large sliced onion (used white onion, since I had it with me)
1/2 tsp ginger garlic paste
4-5 pepper corns
1 tsp butter
3 cups water
1/2 cup milk
Salt to taste

Heat butter in a pan and add peppers. Then add onion and cook untill light gold. Then add the ginger garlic paste, salt and spinach, and cover and cook for say 5 mins, untill done.

After cooling, blend in a mixie with some water. Take a vessel and pour this mixture, remaining water and milk, and bring to boil. Let it simmer for 2 minutes, and serve hot.
I added a few lemon drops to my bowl, and my mom in law added some tomato chilli sauce to hers! Either way, it tasted good. You could add cream, sugar, or croutons! Very healthy too

Roman Style Spicy n Creamy Pumpkin Soup

When we think of pumpkin,the first thought comes to our mind is "Ewwwww..i don't like it"Since my childhood i always hated pumpkin and Mum was really tired telling how good it will be for my health

The fact about it is that its one of the best known vegetables to humankind.It is not only loaded with vitamin A and antioxidants, but it’s a good source of vitamins C, K, and E, and lots of minerals, including magnesium, potassium, and iron.Its colour is beautiful and it makes us think of autumn,harvesting and brightness.

Today being a Sunday morning ,Me and Mum thought about it and made this quick easy Pumpkin soup,which is healthy tasty and so tempting.Dad loved it and so did we both










Ingredients:

Red Pumpkin
Olive oil(Extra virgin is better)
Potatoes
Onions finely chopped
Garlic cloves
Fresh and finely cut Oregano,Parsley,Thyme,Rosemary,Basil
Black pepper powder
Milk
Cream
Salt
Chilly flakes/Red chilly powder


Procedure
In a large bowl put water and chopped potatoes n pumpkins(75% pumpkins 25% potatoes)and bring to boil.
Take a separate pan and add the extra virgin olive oil .Now add finely chopped onions and finely chopped garlic cloves.Saute it till golden brown.Add the herbs+ chili Flakes+ black pepper powder.Now add the boiled pumpkin + potatoes.Let it cook well with onions mixture.Once it is cooked well add some water and milk.
Put the whole thing in a blender and puree till smooth.

Now finally put the puree on the flame and add cream..Garnish with herbs and serve hot with Garlic bread!!

Beetroot Soup

This is an easy to make nutritious soup which can be eaten with rice or simply as an evening snack to overcome not so major sham ki bhook.

What you need is:

1 beetroot
5-6 Tomatoes
Ginger
Garlic
Curry leaves
Mustard Seeds
Cumin Seeds
Salt to taste
Chilly powder
Asafoetida

Method:

Cook beetroot in cooker, peal it and blanch tomatoes . Blend beetroot and tomatoes together, you can sieve the puree if you want..(if health conscious let the fiber be there ) Add chilly powder and salt to it.
In a separate utensil ,for tempering, add little ghee to it add mustard seeds , cumin seeds, crushed garlic and ginger (garlic 4-5 pods, ginger 1/2inch) , curry leaves. After this has turned brown add asafoetida and then the tomatoes and beetroot puree.

Any soup can be thoroughly enjoyed in this season! At the window sipping the soup while seeing the rains. 
