Nachni mawa ladoo

Take the left over milk solids while making ghee. Run it in  a mixer to smoothen it a bit.

Roast some nachi flour in a kadhai and add the milk solids to it, and cook for a while, mixing continuously.

Finally, turn off the gas and add sugar, bind into the desired shape.

Very healthy and tasty

Ladoo - with badam, kharik and gond

Roast 1 cup powdered oats & 5-6 cups wheat flour
Grind seperately 1 cup almonds, 8-10 deseeded kharik (dry dates)
Fry 2-3 tbsp of gond in ghee till it pops

Then to the flours add ghee (I take as per judgement) and roast till nice brown and almost done.
Add the powdered almonds, kharik and mix well.
When turning off the gas, add some jaiphal powder and cardamom powder.

While still hot, at grated jaggery and bind while warm

If you use jaggery, you need less ghee compared to if you use powdered sugar, and its healthy too

Moong Dal Atta Ladoos

Simple to make, though I didn't fancy the flavour much, as compared to besan or atta ladoos
1/2 kg moong atta
1/4 kg besan
1-2 cups oats atta
Dry roast the above
Then add ghee as we do in normal ladoos, and roast. When done, turn off the gas and add some cardamom powder to taste and a pinch of jaiphal powder.
Cool and add powdered sugar as per taste.
Bind into ladoos :)

Winter special Wheat Flour ladoos

1 kg wheat flour - roasted
400 gms pure ghee (I used home made ghee)
300-400 gms jaggery (or as per requirement)
8-10 cardamom - ground
50 gms poppy seeds (khus khus) (lightly roasted)
Gond (gum resin) - roasted & powdered
1 cup almonds - powdered
1 tbsp methi/ fenugreek seends - roasted and powdered
Dry ginger (Sounth) - powdered
3-4 (chwara) dry dates - deseeded & ground/chopped
1/2 jaifal - powdered

Heat ghee in a big vessel. Mix the atta in the ghee, let it heat evenly.
Then all all the remaining ingredients. Turn off gas and add jaifal. Then add grated jaggery while it is hot.
The ladoos will have to be made while still warm, so that the jaggery is melted and distributed evenly.
Very healthy & tasty! Enjoyed by my 1 1/2 yr old baby too :)

Ladoo - Oat & Wheat Flour

1/4 kg oats - ground to flour & roasted
1 kg - coarse wheat flour - roasted
1/2 kg pure ghee
10-12 cardamoms powdered
1 cup powdered - almonds, pistas and walnuts
1/4 to 1/2 kg jaggery

Atte Ke Ladoo

Haven't tried anything significant in the kitchen in the last week.. not been keeping too well.. so here's something from a chit of paper my mom had given me, her all time hit - 'Atte ke ladoo' (So now I can throw away the chit of paper!)

You need:
900 gm wheat flour (preferred - punjabi atta)
500 gms pure ghee
25 gms ilaichis
1 whole jaiphal / nutmeg
Approx 150 gms badam
25 gms khus khus
500 gms powdered sugar

Fry / cook the atta in ghee until brown. (I prefer roasting atta seperately till 3/4th cooked and then frying in ghee. You may need a bit less ghee then..)
Switch off the gas and then add the remaining ingredients (except sugar) and mix well.
When cooled, add powdered sugar and shape into ladoos!

Enjoy

Multi Grain Ladoo

Make this on Saturday.. The Oats ladoos got over, so made another batch, these were around 20-25 ladoos..

You need:
1 cup atta / wheat flour
1 cup besan / gram flour
3 cups oats
1/2 cup rawa
1/2 cup peanuts
5-6 tbsp ghee
Jaggery to taste
8-10 cardamoms

Roast all the flours seperely, one by one, till the raw flavour goes.
Roast the oats till it gives a aroma as if cooked, cool and grind in the mixie to a flour.
Also grind the roasted peanuts.
Heat a kadhai and mix all the flours. Add 1 tbsp of ghee at a time, and mix well. Once its suffiently moist, and cooked, remove from fire.
While warm, add enough jaggery as per the desired sweetness and mix well.
I grate the jaggery and add a little at a time and mix well, then again grate some and add, to ensure even mixing.. And for the quantity, well, I keep tasting in between :)
Finally, when cool, add the crushed cardamom, and make into ladoos when cooled!
Nice and healthy

Oats Ladoos and Besan Ladoos

I tried out these ladoos, from the blogs below.. Turned out pretty good.. Made them in advance for Raksha Bandhan :) And accomplished one more of my to dos

This one goes to Microwave Easy cooking Potluck Party

Check out the recipes (thanks to you both):
Microvawe Besan Ladoo from Bhaatukli's Blog
My variations:
I basically used intuition and judgement for the measurements. I took almost 300-400 gms of besan, and took ghee and sugar accordingly. Since the quantity was more, it took around 10-15 minutes in the Microwave, with stirring after every minute.

Oats Ladoo from Simple Indian Food
I took 2 cups of oats (roasted & powdered), 1 cup roasted rawa and 1/2 cup ghee. Cooked all this in the microwave for 5 minutes.

Powdered sugar's to be added after cooling the mixtures, and I usually taste and add, and taste and add the sugar...

Do try these.. simple and tasty..
