Dal Pakwan


Authentic Sindhi dish, served with buttermilk and mint chutney.

Recipe: 
Pakwan: Warm water + 1 spn oil + salt + jeera + 1 cup maida. Made 2 dozen pakwans with 4 cups maida. Need to roll very thinly, make gashes with fork all over, and fry crisply

Dal: 

Chana dal (soaked overnight) - 500 gm
Moong dal - 1 cup
Ginger
Bring to boil and keep throwing the froth

Cook for 30-40 minutes, the dal should be cooked and pieces whole.
Add salt and tamarind pulp as per taste.

Put a tempering of curry leaves, hing, chilli, amchur, chilli powder, jeera powder, and dhaniya powder at end

Nachni Cookies

Made Nachni cookies using this recipe.
Perfect crispy, and healthy. Makes a great tiffin snack.


   Finger millet/ragi flour roasted  -1/2 cup
   Wheat flour-1/2 cup
   Powdered white sugar/powdered organic jaggery-1/2 cup
   Cold Butter-100 grams- 1/2 cup
   Baking powder -1 tsp
   Vanilla essence   -1/2 tsp 
   Milk - 2 tbsp to knead the dough

Mix and sieve flours and baking powder. Add chopped butter and make crumbly mix. Add sugar, flavour etc. Add milk to knead dough, and keep in fridge for 15-20 mins. Then roll and bake cookies, at 180 degrees in a pre heated oven. Cool on a rack. 

Broken Glass Pudding


Made ready mix jelly and set it in a plate 1 inch deep. Next day, made ready mix pudding. While it was luke warm, put it in the mould. Cut the jelly in cubes (like we do for Dhokla), and slowly put it in the luke warm pudding and set it! 
Makes an amazing party dish!
