Eggless Black Forest Cake
Here's how the Black Forest Cake turned out..
Took my Eggless Choclate Sponge Cake and sliced it in between..
Then, took a pack of instant whipped cream available in the market and followed the instructions on the packet.. (For the writing on the cake, made a cone with a milk packet.. and filled it with the whipped cream).. only the cream turned out a little thin.. but good for a start I guess
For the chocolate flakes, grated our normal choclate available in the grocery shops.
And it turned out to be a nice Birthday treat!!

Breakfast Event Entries at Simple Indian Food !!
These are my entries for the Breakfast Event at Simple Indian Food
Since one is an old entry, I'm reposting them...
MINT THEPLAS
I tried this for a breakfast last week.. Turned out yummy and soft
Ingredients:
2 cups wheat flour
1/4 tbsp crushed dry mint leaves (you can use fresh instead).. take desired quantity
1/4 cup curds
1 tsp red chilli powder
1/2 tsp turmeric powder
1 mashed potato (small)
2-3 tbsp oil
Knead all the ingredients with adequate water.
Then, cook them like your regular theplas / rotis.
NACHNI OMLETTE
Here's an easy snack, which I end up making once a week. With the batter made the previous night (for convenience only..), it can be churned out as a quick breakfast
Ingredients:
Nachni / Ragi Flour (2 cups)
Chopped tomatoes and onions (1 cup)
Some chopped chillies and coriander leaves
Ginger Garlic Paste (if you like)
A few pinches of turmeric powder, red chilli powder
1 tsp coriander powder (if you like)
Salt to taste
Mix all the above ingredients, and add water as per the consistency you like. Here's a pic of the batter..
Grease a non stick pan / tawa with a little oil, and pour as if making an 'uttappa'
This is quite heathly, since it is not fried, and Nachni is supposed to be very healthy.
As a variant, you could use part 'gram flour / chana atta / besan' and part nachi.
Also, you can make the same thing using a mix of moong dal paste (soaked and ground) and/ or 'gram flour / chana atta / besan'

Eggless Choclate Cake
I'm really excited about this one.. My first two cakes were with small quantities, and trial versions.. Here's a real one.. (The pic's a little funny, coz I've covered the cake in cling-wrap)
This is just an adaptation of the Eggless Milkmaid Cake Recipe.
I just added 3-4 tbsps of cocoa powder to the maida while mixing it with baking soda and baking powder.. The batter filled up 3/4th of the dish, and I baked it for 40 mins. And yes, I've made it with the full quantities of the original recipe :)
The fun part for me and my mom in law was when we were staring into the microwave, and the cake started to rise beyond the brim.. (but the batter didn't fall off the dish :))
I feared it'd flop.. but how could it.. after all.. its for my husband's B'day.. I'm planning to covert this into a Black Forest Cake on his B'day.. (but without cherries.. no cherries in the market..) Lets hope it works well.. Wish me luck !!

Oats Ladoos and Besan Ladoos
I tried out these ladoos, from the blogs below.. Turned out pretty good.. Made them in advance for Raksha Bandhan :) And accomplished one more of my to dos

My variations:
I basically used intuition and judgement for the measurements. I took almost 300-400 gms of besan, and took ghee and sugar accordingly. Since the quantity was more, it took around 10-15 minutes in the Microwave, with stirring after every minute.
Oats Ladoo from Simple Indian Food
I took 2 cups of oats (roasted & powdered), 1 cup roasted rawa and 1/2 cup ghee. Cooked all this in the microwave for 5 minutes.
Powdered sugar's to be added after cooling the mixtures, and I usually taste and add, and taste and add the sugar...
Do try these.. simple and tasty..
