Bengali Sweets

Learnt to make these all at a class conducted by a friend earlier this year

Milk mix

Ground together roasted almonds, sugar & cardamom. Added a bit of kesar.

Roasted makhana


Roasted in slight oil, and added salt, turmeric powder, curry leaves, chilli powder

Home made burger pattice


Simply ground 200 gms paneer, 2-3 boiled potatoes, 1 capsicum, 1 carrot, ginger garlic paste, 1 cup of bread crumbs, salt, chilli powder, garam masala powder and chaat masala. Coated with bread crumbs and shallow fried!

Sugar 4 tbsp
Haldi 0.5 tbsp
Salt 1.5 tbsp
Red chilli powder 1 tbsp
Red  chilli flakes 2 tbsp
Ginger powder 0.5 tbsp
Onion powder 1.5 tbsp
Garlic powder 1.5 tbsp
Garam masala 1.5 tbsp
Amchur 0.5 tbsp
Coriander powder 1.5 tbsp
Cumin powder 1 tbsp
Pepper powder 1 tbsp
Fenugreek powder 0.25 tbsp

Sev upma with soya bean




Tempering of curry leaves, rai, jeera & onions. Add 2-3 tomatoes (pureed), bit of turmeric and chilli powder.
Then cook soya chunks in it.
Add water, salt to taste and sev upma and cook till done

Haldi Ambahaldi pickle



Simply slice the fresh haldi and amba-haldi (available in winters only)

For 250 gms of the roots, you would need juice of 10 large lemons mixed with equal quantity of boiled and cooled water

Keep refridgerated

Dal Pakwan


Authentic Sindhi dish, served with buttermilk and mint chutney.

Recipe: 
Pakwan: Warm water + 1 spn oil + salt + jeera + 1 cup maida. Made 2 dozen pakwans with 4 cups maida. Need to roll very thinly, make gashes with fork all over, and fry crisply

Dal: 

Chana dal (soaked overnight) - 500 gm
Moong dal - 1 cup
Ginger
Bring to boil and keep throwing the froth

Cook for 30-40 minutes, the dal should be cooked and pieces whole.
Add salt and tamarind pulp as per taste.

Put a tempering of curry leaves, hing, chilli, amchur, chilli powder, jeera powder, and dhaniya powder at end

Nachni Cookies

Made Nachni cookies using this recipe.
Perfect crispy, and healthy. Makes a great tiffin snack.


   Finger millet/ragi flour roasted  -1/2 cup
   Wheat flour-1/2 cup
   Powdered white sugar/powdered organic jaggery-1/2 cup
   Cold Butter-100 grams- 1/2 cup
   Baking powder -1 tsp
   Vanilla essence   -1/2 tsp 
   Milk - 2 tbsp to knead the dough

Mix and sieve flours and baking powder. Add chopped butter and make crumbly mix. Add sugar, flavour etc. Add milk to knead dough, and keep in fridge for 15-20 mins. Then roll and bake cookies, at 180 degrees in a pre heated oven. Cool on a rack. 

Broken Glass Pudding


Made ready mix jelly and set it in a plate 1 inch deep. Next day, made ready mix pudding. While it was luke warm, put it in the mould. Cut the jelly in cubes (like we do for Dhokla), and slowly put it in the luke warm pudding and set it! 
Makes an amazing party dish!

Half fried eggs prepared in silicon moulds
Sandwiches with lettuce and mayo
Accompanied with roasted tomatoes, chopped cucumber
Also accompanied with baby corn and brocoli, sauted in olive oil with garlic, oregano, salt and pepper, with a dash of lemon juice added
